Sachiko came up with something new for tonight’s drinks. She actually decided to use divination for inspiration. She looked at the Leo horoscope for today. It said to cherish the encounters you make with people. Sachiko thought to herself that tonight’s dinner would have to be special. But the shop was deserted today with business unusually slow. She realized that if things continued like this, it might affect her mood for the night. Looking at her notebook, Sachiko decided she had to do something to make amends. So, she went to the gym for a few laps and then, as usual, took a 43° hot bath back home. Then, she began preparing the ingredients. For her first side dish, she chose salmon. She cut the fish into pieces and placed them in a bowl, added avocado and some salted kelp. The seasoning consisted of sesame oil, soy sauce, sugar, and pureeed dried red and green peppers. A simple blend and refrigeration to let the flavor soak in, and you’ve got a perfect appetizer. The second dish uses dried gourd sent by a neighbor. She grate fresh horseradish, enhancing the gourd’s flavor with a sharp spicy kick. A simple preparation and another side dish is ready. The main course, of course, needs to be a highlight. She first places a piece of kelp in the pot, chops plenty of green onions, and chills them in ice water. She slices the salmon, the texture delicate and enticing. Each cut fills Sachiko with anticipation for tonight’s drinks. She arranges the slices neatly, and finally, the final touch is the sauce. She prepares two. The first uses yuzu vinegar with grated radish and a sprinkle of chopped green onions, refreshing and light. The second uses sesame paste as a base added with minced garlic and fermented black bean paste, creating a dipping sauce with a hint of Chinese flavor. Everything was ready. Sachiko pulled a beer and iced glasses from the refrigerator. Tonight’s sumptuous salmon dinner was finally complete.
